Peaches

I bottled peaches all by myself!  I'm writing this so I will remember what I did when I bottle again.  I bought 24 lbs of peaches for $19.50.  It was enough peaches to fill 13 quart bottles, eat a few and dry dry six or seven that were too far gone to bottle.

I used a light syrup (3 cups water/1 cup sugar), and processed for 31 minutes. (2 and 1/3 batches of syrup is almost enough for 7 quarts of peaches.  I needed about 1/2 cup more for my first batch.)

Sorry.  Not interesting, but it will help me next year!
